A Recipe: Chocolate Banana Cake

Last week I had a dirty, unadulterated craving for serious amounts of chocolate. I wanted to shovel an entire tin of celebrations down my throat. I'm talking death by chocolate. A penguin biscuit or eating nutella out of the jar with a spoon just wasn't going to cut it.

Randomly, I also had a bunch of bananas that needed eating. (I hate waste and can't bear to throw food away). Brown bananas usually get turned into banana bread in this house but I needed a sweet treat that would leave me groaning and holding my stomach and unable to move for hours after eating it. 

So I {super creatively} put the two together and decided to create a Chocolate Banana Cake.

I used my Chocolate Fudge Cake recipe as a base - but added three mashed up bananas to the cake mix and used 400g of chocolate (no Cadbury's fudge bars) in the butter cream icing.

It was either going to be a raving success or a complete disaster. Waiting for the results was a very tense time indeed, although we did thoroughly enjoy licking the bowl and spoon....


After 45 minutes in the oven (gas mark 4) the wait was over. Out came the sponges and, after cooling for 20 minutes, they were smothered in icing and two big fat slices were cut.

I am delighted to report that it was bloody delicious. Hurrah! - I love coming up with, or adapting, recipes to use up food that may end up going to waste.

The banana made the cake super moist - it lasted perfectly until today, when the last crumbs were eaten - and they also made it super virtuous.... there must have been at LEAST half of one of your five a day in each slice! Sounds like a good excuse to eat more than one if you ask me xoxox
