@VitamixUK Recipe: Thai Ginger Soup
This is the first of many Vitamix recipes I will be posting over the next few weeks. You can see my post all about the Vitamix Total Nutrition Center here.
The very first thing I decided to make was the Thai Ginger Soup. This is my variation of an official Vitamix recipe (found on the Vitamix Facebook page) and is the recipe that originally lured me in at BritMums. It takes less than five minutes to prepare and needs just seven minutes in the Vitamix. The end result? A delicious, authentic, hot (YES HOT!) Thai soup. Preparation Time: 5 minutes
Vitamix Time: 7 minutes
Makes four large mugs
500 ml water
1x large carrot
1/2 stalk of celery
1/4 yellow bell pepper, with stem and seeds
1 spring onion
1 slice of cabbage
1/4 apple – preferably Gala
1/3 glove of garlic
1 small slice of chilli pepper
1 1/2 cm ginger
1 handful of coriander
2 handfuls of unsalted cashew nuts
1 cm slice of lemon with skin
1 1/2 Knorr vegetable stock cubes
What to do.
1. Place all ingredients, except the courgette, into the Vitamix in the order listed. Secure the lid.
2. Select VARIABLE, speed #1. Turn machine ON and quickly increase speed to #10; then to HIGH. Run for 5 to 6 minutes or until steam escapes through the lid plug opening.
3. Reduce to VARIABLE, speed #2. Remove lid plug and add the reserved courgette through the lid opening and run for an additional 5 seconds. This will add texture to the soup.
4.Garnish with fresh coriander leaves or a sprinkling of crushed cashew nuts and serve!
