@VitamixUK Recipe: Chunky Guacamole
This is, without ANY shadow of a doubt, the TASTIEST guacamole I have ever eaten.
It's another 30 second recipe, and one that is packed with goodness. It's high fibre, low carb and low fat and everyone knows that avocados are a super food. Combined with the chilli and tomatoes this side dish is a perfect immune system booster!
Preparation Time: 5 minutes
Vitamix Time: 30 seconds
Makes around 300g
2x large, ripe avocados
1/2x red onion
1/2x red chilli, deseeded
1x handful fresh coriander
Squeeze of lemon juice (a natural preservative)
Salt + pepper to taste
What to do.
1. Put the ingredients into the Vitamix in the order listed.
2. Select VARIABLE, speed #3.
3. Use the tamper tool to ensure all the ingredients blend and then run for approx 30 seconds. The consistency should be chunky, not smooth - so stop sooner if you think you need to.
Serve however you want to - we had it for lunch with pitta, houmous (also made in the Vitamix.... recipe coming up tomorrow!) party snacks and vegetable crudites and then we had the leftovers as an accompaniment to chilli con carne the next day.xoxox
NB: This recipe tastes best eaten straight away but is fine when left overnight in the fridge.
