Houmous is a staple food in our household. In fact it's one of the very few lunches Daisy-the-Fussy-Eater will demolish and Evie will too, which is handy!
I have to admit to buying houmous most of the time. I went through a phase of making it a couple of years ago when I realised just how easy it was - and how much cheaper it worked out - however it was the washing up of my old blender that put me off. As you know, the Vitamix requires no effort whatsoever when it comes to cleaning so now I've reverted back to my virtuous old ways of making my own! The best bit about making your own is that you can flavour it in any way you like - you can add sundried tomatoes or peppers, some fresh herbs (coriander anyone?) or anything else you've got that needs using up!
Preparation Time: 5 minutes
Vitamix Time: 45 seconds
Makes around 300g
Chickpeas - I used a 400g can (drained) but if you use dried remember to soak overnight as per the instructions!
Juice of 1x lemon
3x tbsp extra virgin olive oil
3x garlic cloves (less if you prefer)
50g sesame seeds
What to do.
1. As per all of my recipes - put the ingredients into the blender in the order above and add 100ml of water.
2. Select VARIABLE speed #1, slowly increase to 10 and then switch to HIGH.
3. Run for 30 seconds and use the tamper tool if you need to push the ingredients into the blades.
Voila! Serve with pitta, vegetable crudites, fallafel or as part of a meze - and enjoy xoxox
