Sweet Potato, Cauliflower, Spinach & Bacon Burgers

Last week I discovered a new recipe that I was gagging to try. It was for sweet potato, spinach and bacon burgers (and you can view the original recipe and VERY delicious looking imagery here).

As it happened I forgot to get turkey mince at the supermarket (oops) and I had loads of bits and pieces in the fridge that I wanted to use up so I ended up creating my own version.

I added cauliflower, onions (red and spring) and some spices, then used my Lakeland burger press to make four huge quarter pounder sized burgers. THEY WERE AMAZING! Even the husband liked them! 

The recipe went a little like this:

8x rashers of streaky bacon (quite a lot of this may have been eaten before it was added to the burgers....)
3x medium sweet potatoes
1/2x head cauliflower
2x handfuls spinach
1x red onion
3x spring onions
1/2x tsp cumin
1/2x tsp dried coriander
1/2x tsp paprika
Polenta to coat the burgers

What to do.
Chop the bacon into little pieces and fry in olive oil. Pat with kitchen roll to remove excess oil. Set aside.
Use the pan, and any remaining oil in it, to fry off the onions and also set aside.
Peel and chop the spuds, boil for 15 mins.
While the potatoes are cooking, prepare the cauli and also boil.
Chop the onions and spinach.

Once the potatoes and cauliflower are cooked, mash roughly then add to a mixing bowl with all of the other ingredients, including the spices. Mix.

Divide the mixture into four patties (use a burger press if you have one) and then coat each burger with the polenta.
Fry until lovely and golden brown.

Serve with salad and, in my case, lacto free cheese. 

The polenta really makes this recipe as it goes a beautiful colour when fried - and it adds a delicious crunch to each mouthful.
